Prawns in Sweet Soy Sauce with Udon Noodles

Oh my. I discovered this recipe by complete accident and have already made it 3 times including for my sister in laws birthday where it went down a treat.
 
So, after a long day at work very unusually I didn’t feel like cooking at all. But, needs must so I got home, had lots of love from my fur babies and made my way to the kitchen. Quick and easy, quick and easy, I opened cupboards and the fridge and voila, a yummy meal was invented.
 
I found some udon noodles hanging around in the cupboard, yup, they were going to cook quicker than rice, just 7 minutes. The prawns take no time and finally just add a little something to it all.
 
My staples for fish are soy sauce, chilli and garlic. You can’t go wrong with them and the fish always tastes so good, be it prawns, mussels (but I do prefer wine to soy here!) or salmon, honestly consider these simple ingredients to wow your other half with pure joy on a plate.
 
Recipe
 
250g Prawns (if you use tail on it makes it fiddly to eat, I let the prawns defrost and pop them off before cooking)
1 Tbsp of vegetable oil
4 Clove of garlic chopped
2 Tbsps. of fresh ginger grated
½ Tsp of dried chillies (I use 1 Tsp but I like hot)
4 Tbsps. Dark Soy Sauce
1 Tsp Sugar
1 Pack Udon Noodles
 
Method
 
-Heat a pan of water to boiling. Add the udon noodles, after removing the paper, I forgot the first time! And simmer for 7 mins.
 
-Heat the oil in a frying pan, add the garlic and ginger and cook for approx. a minute and a half.
 
-Add the chilli and mix for approx. 30 secs, the oil takes on the flavor of the chillies
 
-Add the Soy sauce and sugar and allow all the ingredients to cook for a minute or so.
 
-Once the sauce starts to thicken a little add the prawns and coat in the sauce. Cook for approx. 3 minutes and remove from the heat.
 
-The noodles should be ready by this time so drain them and add to the frying pan with the prawns. Stir together until the noodles are coated and serve immediately.
 
I have also tried adding some sweet chilli sauce at the end and this too works very well.
 
Enjoy the simplest most amazing dinner in under 15 minutes.
