I thought I would do a couple of easy and filling weekend, or indeed weekday, lunch rolls.
 
If, like us, a Saturday morning is spent either walking the dogs, cleaning the house or generally catching up on a weeks’ worth of errands there is nothing nicer than coming home to a lovely shared lunch to begin the afternoon wind down.
 
I love the simplicity of the BLT and cannot resist the flavors of a crispy coated chicken with mayo & BBQ sauce roll. I have always got bacon and, I’m not ashamed to admit, the frozen spicy breaded chicken from a particular supplier for these very occasions. All you need to pick up are some nice fresh rolls and everyone can build their own lunch. Such a sharing together lunch.
 
As long as you can cope with people in your kitchen get the family in on the tasks. One can set the table making sure there are lashing of mayonnaise and BBQ available. One can slice the tomatoes and lettuce and prepare the rolls. One can get the bacon and the chicken ready (the chicken takes around 20 minutes in the oven so get that started first), the unlucky one…..gets to do the dishes! Rota the last one it’s only fair.
 
I can’t really put together a real recipe for you here, just to say…..
 
BLT Roll
 
– Bacon
– Lettuce
– Tomato
– Mayonnaise
Multigrain pocket bread (or any other bread you prefer)

Naughty Chicken Roll
 
– Spicy breaded chicken breast
– Mayonnaise and BBQ sauce to your liking.
Kaiser buns (or any other bread you prefer)

Don’t forget there is lettuce and tomatoes available too. Some like to add onions too, the choice is yours.
 
If you’re a making the rolls for a work or school lunch just be careful how much mayo and BBQ sauce you are using as it tends to ooze and get messy. All adds to the eating experience I say.
